Breakfast Banana Muffins

Great quick breakfast!  Obviously I prepare the day before…!

  • 2 ½ Cups Almond Flour
  • 1 tsp cinnamon (except of course I use more as I love cinnamon!)
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 large overripe bananas mashed
  • 3 eggs
  • 1/2 cup coconut oil
  • 1 tsp vanilla
  • 2 Tbsp honey (optional)

Preheat oven to 175°C.

Combine all dry ingredients in large bowl.   Combine all wet ingredients in medium bowl.  Combine both.  Spoon into muffin tins.

Cook for ~30 minutes or until a knife inserted into the muffins comes out clean.
