Great quick breakfast! Obviously I prepare the day before…!
- 2 ½ Cups Almond Flour
- 1 tsp cinnamon (except of course I use more as I love cinnamon!)
- 2 tsp baking soda
- 1/2 tsp salt
- 2 large overripe bananas mashed
- 3 eggs
- 1/2 cup coconut oil
- 1 tsp vanilla
- 2 Tbsp honey (optional)
Preheat oven to 175°C.
Combine all dry ingredients in large bowl. Combine all wet ingredients in medium bowl. Combine both. Spoon into muffin tins.
Cook for ~30 minutes or until a knife inserted into the muffins comes out clean.
