Slow Cooked Chicken and Avocado Salsa

This is a quick and easy dinner recipe that I’ve made many times for different family and friends.  It’s pretty simple – slow cook your chicken whilst at work, chop up your salsa ingredients when you get home and mix them together – then put it all in Iceburg lettuce leaves (as if you’re making fajitas).  Fair warning: lettuce wraps are always a LITTLE messy so don’t forget the napkins!


Slow Cooked/Pulled Chicken – Combine all ingredients in Slow Cooker and cook for 6 hours then transfer chicken to bowl and pull chicken apart with two fork when done.

  • 2 chicken breasts
  • 1.5 cups chicken stock
  • 3 cloves of garlic
  • 1/2 a red onion chopped
  • salt and pepper

Avocado Salsa

  • 2 avocados
  • 2 tomatos
  • big handful of coriander
  • 1/2 a red onion
  • gluten free sweet chilli sauce
  • lime juice from 2-3 limes
  • salt and pepper
