Yummy Breakfast Quinoa (Which I still pronounce “Kwin-O-Aaah”!!!)

For 2 people

  • 3/4 Cup Quinoa
  • 1 can (270mL) coconut milk  (make sure you get good quality here – not the ones with added emulsifiers and thickners!)
  • 2 apples, peeled and chopped
  • 1/2 cup sultanas
  • 1 tsp vanilla
  • pinch of nutmeg
  • 2 tsp of cinnamon (I LOVE cinnamon so I use heaps!)
  • Dash of 100% Pure Maple Syrup if you want it sweeter, or Honey

Combine all ingredients in pot.  Simmer over medium heat until the quinoa is soft and not too chewy, and the apple is stewed.

Top with mix of seeds (I use Woolies Sunflower, Pumpkin and Pine Nuts)

Eat!

Quinoa is a great source of protein and is a seed not a grain so it’s still Paleo and is not going to do as much damage to your gut.  Also a great source of healthy fats from the coconut milk.
